Fig Jam

What is one to do with the eleven pounds of figs just picked from the fig tree? Make a wad of fig jam!

All you need are two ingredients for this one. No added sugars. It’s Natural. Low Fat. Vegan. Gluten Free. Paleo. (Add in all hip, healthy buzz words here ’cause this hits em all.)


Makes a ton.

10 lbs Fresh figs….from my tree if you’re nearby
1 cup Balsamic Vinegar


Cut off stem tops then cut figs in half. Put them in a large soup pot with the vinegar. Cover with lid and put on medium heat. When it starts to bubble turn down heat and simmer, stirring occasionally, for 35-40 mins or until all figs have broken down.

Puree either with an immersion blender or in a food processor in batches until smooth.

Let cool completely and transfer to jars or air tight containers.

This recipe is brilliant on toast or even meats. Ideal for using up, sharing and freezing all those figs just in time for the end of fig season.
