Meatless Monday’s Vegetarian Thanksgiving = Great Side Dishes!

While the hubby is busy becoming a star I am left covering this glorious blog so what else would I write about?

I’ve been a vegetarian since age 11-ish, which was a bit out of the ordinary growing up in Texas. It was even harder when it came down to holiday meals as my vegetarianism drove my poor mother crazy. Not sure why exactly–truth is I didn’t (and still don’t) mind if other people eat it, it’s just not my preference. I think my mom thought I was being cheated by just only having sides but that’s what I loved—I mean how many of you who eat turkey are more excited about the side dishes? Believe you me, I have no problem stuffing my face with green beans, potatoes, cranberry sauce, stuffing (if it’s vegetarian-friendly of course)—the works!

Here’s a list of some scrumptious vegetarian dishes that would be a great addition to your Thanksgiving feast:

Butternut Squash Soup (pictured above)
Persimmon Salad (pictured above)
Spiced Potatoes with Arugula Salad (pictured above)
Squash Lasagna (pictured above)

these dishes look absolutely yummy…maybe I will go meatless this Thanksgiving also,
