Seasonal Berry Delight

Being an avid farmers market peruse-er I see all the beautiful fresh seasonal fruit & veg every week. Right now there’s some fabulous stuff around; peaches, plums, berries, cherries, just to name a few. My clients come to me ’cause they know I’m the healthy chef so when I’m booked to do dinner parties, as I did last weekend, I need to come up with some healthier sweets as well. Right now the fruit is dynamite at the markets so this is a great example of using top quality seasonal & simple ingredients to make something smashing and damn tasty.
This is also perfect if you’re hosting and cooking your own party as you can put this together in no time while still enjoying hanging out with your guests.

RECIPE:
Serves 4

3 organic peaches (white, saucer, yellow)*
Handful fresh organic berries (raspberries, blackberries, blueberries or whatever you want)
Fresh mint – chopped (garnish)

To Macerate sliced peaches:
1/2 tsp almond essence
1/2 tsp vanilla essence
1 tbsp honey

Topping:
6 oz organic low fat sour cream (I used Organic Valley gluten-free sour cream)
1/4 tsp vanilla essence
pinch of cinnamon

*NOTE: I found the yellow peaches to be a bit too soft for grilling so opt for the other two if available.

DIRECTIONS:
Cut the peaches in thick slices around the stone in the center. Place them in a large mixing bowl and add essences and honey. Give it a toss to coat peaches. Let stand for 2 minutes. Meanwhile mix the creme fraiche ingredients. Taste and adjust with more cinnamon if preferred.

Preheat grill pan on medium high for 2 minutes. Grill each peach segment for 1-2 minutes on each side until nice grill marks appear. You don’t want to cook them, just caramelise and warm them slightly.

To assemble:
Place a few different types of peaches on each plate with a handful of berries and a dollop of the vanilla creme fraiche on top. Sprinkle with mint.

A simple, seasonal, gluten free dessert that looks the business and tastes brilliant, if I do say so myself. Believe me you can’t go wrong with this. Cheers!

Mmmmm….I love summertime and fresh berries! And I’m on a kick these days to go as organic as possible….who needs all those chemicals and pesticides?? Those just don’t sound so appetizing!

This was delectable! Thanks for posting such a wonderful, fresh dessert. I had invited vegetarians for dinner and had planned on a peach cobbler a la mode until I realized it was made with eggs/milk and I didn’t know the extent of my guests eating habits (cheese eggs and light dairy OK, anything without pain receptors).

This was a great ending to a wonderful meal. The extracts were perfect and the peaches divine.
