Here’s a simple really tasty recipe to kick off the week. You’ll love the deep rich flavour of the chicken and smokiness of the paprika. It goes down a treat.
1 x 5 lb organic chicken (2 breasts, 2 drumsticks, 2 wings, 2 thighs)
1 tbsp paprika
1 tbsp olive oil
1/4 tsp salt
1/2 tsp pepper
1 x 15 oz can whole peeled tomatoes
6 0z baby zucchini
1 x 15 oz can white beans
8 oz button mushrooms – quartered
2 garlic cloves – minced
1 cup red wine
1 lemon – zested
1 bouquet garni (oregano, thyme )
1 quart homemade organic chicken stock
2 tbsp olive oil (for searing chicken)
2 tbsp olive oil (for saute veg)
Preheat oven to 350°F.
Preheat grill pan on high for 2 minutes. Add chicken pieces in large mixing bowl along with paprika, drizzle olive oil and S&P. Mix.
Drizzle olive oil in hot pan and sear chicken on all sides for 2-3 minutes until golden brown. Once browned remove to an oven proof dish.
Wipe out same pan with kitchen towel and reduce heat to medium.
Add 1 tbsp olive oil and saute mushrooms, zucchini and garlic for 2-3 minutes, stirring. Once softened add wine, tomatoes and beans and simmer for 3-4 minutes.
Add everything to the chicken and cover with foil. Pop in oven for 2 hours or until chicken is fork tender.
